Norwegian Drop Cookies!
My Mom's family has Norwegian blood.
Do you know where Norway is? They make some seriously nom nom foods!
I'm dying to tell you how to make lefsa! Soon!
It was a bazillion degrees below zero yesterday... and lucky us it is again today... so it seemed like a perfect day to have a baking session!
Norwegian drop cookies are an old favorite and can be made a few different ways but this is our way...
NORWEGIAN DROP COOKIES
1 cup white sugar
1 cup brown sugar
1 cup butter
1 egg beaten
1 tsp vanilla
dash of salt
1 tsp baking soda
1 tsp baking powder
1 1/2 cups white flour (or a bit less if whole wheat flour. I usually half and half flours)
1 1/2 cups rolled oats (not quick)
1/2 cup coconut
Add chocolate chips, m&ms, craisin, raisins, walnuts to your desire.
I only add semi sweet chocolate chips &/or m&ms.
Preheat oven to 330.
Mix sugars, butter, vanilla and add beaten egg. Set aside.
Mix dry ingredients and add to butter mixture.
Roll into small balls and place on an ungreased cookie sheet.
Bake 10-12 minutes, do not overcook. They are best a bit chewy in the middle.
